Honey-Roasted Carrots Recipe

Nothing compares to roasting carrots!
When you roast them in the oven, the dry heat pulls the water from the carrot.
Causing the left-behind sugars to caramelize.
8 medium carrots
1 tbs unsalted butter, melted
1/2 tbsp raw honey
1 tsp fresh thyme
Salt to taste
Slice each carrot once lengthwise and coat both sides with melted butter. Sprinkle with 3 twists of a salt mill.
Roast the carrots for 20 to 25 minutes at 425 F. Turn once halfway through cooking.
When done roasting, drizzle honey over the carrots and scatter the fresh thyme over top.
