fermented okra with dill

14-18 whole okra Handful of fresh dill 4 cloves garlic, crushed 1 tsp peppercorns 4 tsp coarse kosher salt

Ingredients

Step 1

First, stir the salt into 2 cups of water until dissolved. This is your brine, set it aside.

Step 2

Put the peppercorns in the bottom of a glass jar and lay the stems of dill flat on top. Arrange the okra vertically in the jar on top of the dill.

Step 3

Push the garlic cloves down between the stalks of okra.

Step 4

Pour your brine over top of the okra. Ensure that the top of the okra is completely covered by the brine.

Step 5

Leave the jar on your counter, out of direct sunlight, for 4 to 10 days.
