One pan chicken drumsticks & potatoes

1.5 lbs chicken drumsticks 4 large carrots 3 medium potatoes 1 large lemon 4 large rosemary sprigs 2 tbsp olive oil Salt & Pepper

Ingredients

Step 1

Peel the carrots and slice them in half lengthwise. Scrub or peel the potatoes and slice each in half as well. Slice half the lemon and reserve the rest.

Step 2

Place a piece of parchment paper over your sheet pan. Scatter the lemon slices over your pan..

Step 3

Top each lemon slice with the bulbous end of a chicken drumstick.

Step 4

Nestle the carrots and potatoes in around the chicken drumsticks.

Step 5

Drizzle with olive oil. Sprinkle the entire pan with a generous pinch of salt and pepper.

Step 6

Squeeze the second half of lemon over everything.  Top the pan with your rosemary sprigs.

Step 7

Roast for 40 to 50 minutes at 450F until the chicken is cooked through.
