How to Roast Beets

1 lb red beets 1.5 tsp olive oil


Slice the stems and greens from the beets. Use a vegetable peeler to remove the skin from the beets, then chop them into 1.5 inch pieces.

Place the cut beets in a large bowl and toss them with the olive oil until fully coated. Spread them out on a parchment-lined baking pan.

Roast the beets on the middle rack of an oven at 350 F. Roast for 45 minutes until easily pierced with a paring knife and the outside is starting to brown.
