how to make creamed corn with fresh corn

4 ears of corn on the cob 1 tsp white sugar 1/2 tsp salt 2 tbsp cornstarch

Step 1

Shuck the corn then boil it for 3 minutes. Remove all the kernels from cob with a sharp knife.

Step 2

Make a slurry to thicken the cream corn. Add 1/4 cup of cold water and the cornstarch to glass jar. Replace the lid and shake vigorously until the cornstarch is dissolved.

Step 3

Place 3 cups of fresh corn in a pot with the sugar, salt and 1.5 cups of water. Give the mixture 3 pulses with an immersion blender.

Step 4

Bring the corn mixture to a simmer and slowly pour in the slurry. Stir constantly. Taste it and add more sugar if needed.
