how to cook Delicata Squash

1 lb whole delicata squash 2 tsp olive oil 1/2 tsp rubbed sage


Step 1

Slice the stem ends off the delicata squash. Then cut it in half lengthwise.

Step 2

Use an ice cream scoop or metal spoon to remove the seeds and pulp.

Step 3

Flip over the squash halves so they are skin-side up. Cut them into 1/2 inch crescent-shaped slices.

Step 4

Toss the squash slices with olive oil and sage. Spread the slices of squash in a single layer on a parchment-lined baking sheet.

Step 5

Roast at 400 degrees F for 25 minutes. Flip each piece of squash. Then place back in the oven for another 5 minutes.
