how to cook butternut squash in the oven

2 lb fresh butternut squash 2 tsp olive oil


Step 1

Slice the stem end off the squash. Then lay the squash on its side and slice it in half, lengthwise.

Step 2

Use an ice cream scoop or sturdy spoon to remove the seeds. Rub 1 teaspoon of olive oil into the flesh of each half of squash.

Step 3

Place the squash on a parchment-lined baking sheet. Roast at 425 degrees for 50 to 60 minutes.
