Grass-Fed Ground Beef & Summer Squash Skillet

1/2 medium onion 1 lb grass-fed ground beef 3 small summer squash 1 lb fresh tomatoes 1.5 tsp dried oregano Salt and pepper to taste


Step 1

Add chopped onion to a hot skillet with a little oil. Stir often until the onion starts to soften. Add the ground beef and cook until browned though.

Step 2

Remove the beef and onion from the skillet and add the sliced squash. Cook about 10 minutes until done.

Step 3

Add the chopped tomatoes to the squash. Stir well and simmer very low for 5 minutes with no lid.

Step 4

Add the ground beef and onion back to the skillet with the squash and tomatoes. Sprinkle with oregano and stir well to serve.
